Raicilla
Raicilla is a traditional agave spirit from Jalisco and Nayarit, made by small producers. It received a denomination of origin declaration in 2019.
How to describe it to a guest
Raicilla is an agave spirit from Jalisco, lesser known than mezcal; this one is very fruity with little smoke.
Origin
It is made in the western Sierra and the Coast of Jalisco, and in part of Nayarit. For a long time it was a local, almost household spirit.
Production
Different agave species are used depending on the area, such as Agave maximiliana in the sierra and Agave angustifolia on the coast. The hearts are cooked, crushed, fermented and distilled, often in small stills.
