Charanda Sour

Editorial originalCharandaMexican cocktailsIntermediateEditorial draft

A Michoacán sour: charanda, lime and piloncillo with a silky foam. It shows the grassy, cane-driven character of one of Mexico's lesser-known spirits.

Story

We developed it in the BARTENDER.MX editorial kitchen as a gateway to charanda, Michoacán's designation-of-origin cane spirit. Piloncillo reinforces its cane notes.

Technical notes

The dry shake builds foam before chilling. Piloncillo syrup tastes less sweet than white sugar by volume and adds toasty notes; adjust to your syrup.

Serving

Before dinner, with Michoacán antojitos.
