Clarified Margarita
Margarita clarificada
A crystal-clear, silky Margarita made by milk clarification. It keeps the agave and lime but gains a soft, round texture no shaker can give.
Created by BARTENDER.MX Editorial Kitchen
Ingredients
- 50 mlBlanco tequila
- 20 mlOrange liqueur (triple sec)
- 25 mlLime juice
- 5 mlAgave syrup

Step by step

Pour the mix into the cold milk (never the reverse) and let it curdle undisturbed for about 30 minutes.
- 3
Filter through a coffee filter or fine cloth, returning the first cloudy portions, until it runs crystal clear.

Refrigerate. To serve, stir 100 ml briefly with ice and strain over a large cube in a half-rimmed glass.

Advance prep
Clarify at least 2 hours ahead (filtering is slow). One-liter batches make about 9 servings.
Flavor profile
Story
Milk clarification comes from the milk punches of the 17th and 18th centuries. In the BARTENDER.MX editorial kitchen we applied it to the Margarita to show how an old technique transforms a Mexican classic.
Technical notes
Lime acid curdles the milk's casein, which traps particles and tannins as it filters. The result is clear, more shelf-stable and silky from remaining whey proteins. It may contain dairy traces: do not serve it to guests with milk allergies. Refrigerated and sealed it keeps for several weeks.
Serving
Ideal for events: made ahead and served in seconds.
