Consistency and Quality Control
Making a drink taste the same every time takes systems: written specs, calibration, daily tasting and team feedback.
Written, accessible specs
Every recipe needs a spec card: amounts, method, ice, glassware, garnish and a reference photo. It should live at the bar, not just in the head bartender's memory.
The variables that drift
Even when the recipe stays the same, ingredients don't.
- Citrus: acidity and sweetness change by season and batch.
- Ice: temperature and size affect dilution.
- Syrups: concentration and freshness.
- Technique: shake or stir time across bartenders.
QC routines
Taste ingredients at opening, make one calibration drink per shift and compare drinks across bartenders now and then. For batches, checking final volume or syrup Brix with a refractometer helps standardize.

Syrups, cordials & shrubs
Syrups and Cordials
Syrups are the backbone of balance: simple 1:1, rich 2:1, agave and piloncillo. Cordials add acid and flavor so one component brings both sweetness and sourness.
